Elk&Owl Craft Coffee Co. began in 2021 at farmers markets across Central Alberta, where we discovered a growing demand for something we cared deeply about: exceptional coffee, roasted with integrity and shared without pretension. What started as a simple booth run by a local family quickly became a full-fledged café in Sundre—still small, still personal, but with a growing community behind it.
We specialize in specialty-grade beans, roasted in small batches and sourced through ethical, farmer-focused supply chains. Our focus is singular: to offer top-tier coffee that’s approachable, not exclusive. Prestige without the pretension. Really good coffee—made for people who know the difference, and those who just know what they like.
Today, Elk&Owl is still family-run, still rooted in community, and now reaching even more coffee lovers through online orders and select grocery stores across Alberta. Crafted from specialty grade one beans, Maze Peak is a smooth, easy-drinking blend made with coffee sourced directly from farmers and farmer-owned cooperatives in Brazil and Colombia. Expect rich, comforting notes of toasted nuts and caramel in every sip.

This bold and flavourful roast is made with specialty grade one beans from Colombia and Guatemala, sourced directly from farmers and farmer-owned cooperatives. The Mogiana region, spanning São Paulo and Minas Gerais, is renowned among Brazil’s growing regions, characterized by rolling hills and small to medium farms. This lot is sourced from Cooperativa Regional de Cafeicultores em Guaxupé (Cooxupé), founded in 1937 with 14,000 active members. Producers maintain farms averaging 60 acres, hand-picking cherries and sun-drying them to 15% moisture before precise mechanical drying to 11%. Cooxupé’s dry mill ensures traceability and quality control, allowing producers to be compensated based on coffee quality. Our current offering is Fine Cup (FC) and Strictly Soft (SS), the highest grade in Brazilian coffee.

Farms where this coffee is produced are located in the mountains close to the Mexican border. Higher altitude helps develop complexity in the beans. Coffee cherries are picked by local families and within 12 hours from harvest depulped and washed. After that, producers dry beans on patios to reach 11% humidity in the parchment coffee. Dried beans are quality checked and shipped into Guatemala City to a milling facility before leaving port to our roastery.
The coffee region of Huehuetenango emerges as a gem in the world of specialty coffee. Situated amidst towering mountains and lush valleys, this region boasts an ideal microclimate for cultivating exceptional Arabica beans. The altitude, ranging from 1,500 to 2,000 meters above sea level, combined with a distinct dry season and cool nights, imparts unique flavor profiles to the coffee grown here.

Huila is a famous coffee region in south of Colombia. Coffees from this region are bright and fruity with lots of complexity. Our producers work with the latest technologies to conserve as many volatile compounds of flavour and aroma as possible.
El Tulipan, working with the Osorio family, is coffee produced by small holder farmers in Huila, southern part of Colombia. Those farmers send their coffee to a local cooperative, which ensures consistency and quality of harvest. Coffee cherries are depulped between 8 – 24 hours after harvest and let fermented in open tanks over night before going through a washing process. The washed coffee is then transferred under solar panels to dry. Solar panels help with stable drying temperature and protect beans from rain. Dried coffee is then sent into a milling facility to get rid of parchment and shipped to our facility.

Our San Ignacio Peru Norte is sourced from small-holder farms. Producers typically cultivate coffee on just a few acres of land intercropped with shade trees, bananas, corn, and beans. They carefully harvest and sort cherries before de-pulping, fermenting, washing, and drying the coffee using their own micro-mills. Partnering with women’s cooperative Aproselvanor works not only to support the commercial endeavors of its members but also to facilitate the development of their communities. The Aproselvanor financial team provides short-term credit that helps farmers cover the front-end costs of the harvest and materials in the coffee production.
